It was my youngest daughters' 15th Birthday over the weekend - its always difficult to find recipes and foods that are 'acceptable' to this age group (or any age group probably!!). Teenagers particularly like 'sweet' foods and Marcella is no exception - she craves sugar (more addictive than cocaine - marie claire).
So you need to find ways of giving them the sugar hit - without using refined sugars. This is one such recipe that she adores, its so simple and reminds me of lovely holidays in Spain.......enjoy!
Spanish inspired almond and orange cookies
2 1/2 cups of Ground Almonds
1/2 cup Agave Nectar
4 tbls (one jar) Raw Almond Butter
6-8 drops Almond Extract
2tsp Grated Orange Zest
Raw Whole Almonds, to top each cookie
Mix all the above indredients together to form a paste and either roll out and use a fluted cutter or roll into balls and squash flat into a round shape. Place on a dehydrator tray for 10-12 hours. If you don't have a dehydrator put into a cool oven around 110.
